A trip to Italy inspired P.Za Kitchen and our Roman Pizza menu. Walking down the streets of Rome, customers order Roman-style Pizza al taglio, or Pizza by the Cut, on the go. One bite and the creators of P.Za Kitchen were inspired to bring this unique pizza back to the States. Our chefs trained with master bakers to learn the art of Roman pizza and sourced the best ingredients to create pizzas that had us exclaiming “Ooh ZA ZA!” after each bite.

Why Roman-style Pizza?

P.Za Kitchen uses authentic Italian ingredients to create our Roman pizzas. The magic starts with the crust ingredients: Italian flour, extra virgin olive oil, yeast and water. After mixing, the dough rests for two whole days. The secret to the best Roman pizza is allowing the dough enough time to rest and develop large air bubbles. Those large air bubbles are the key component to a light and airy pizza crust. On the third day, the dough is ready to be transferred into pans to rise and proof for eight hours.

It’s time to gently shape the dough in the signature rectangular Roman pizza pan made of Italian steel. The chef lightly wipes the pan down with olive oil to ensure a crisp exterior while maintaining the tender dough.

Let’s talk sauce! Only the ripest tomatoes are used. Those flavorful ripe tomatoes provide the perfect base for all of our toppings. In honor of our Italian travels, P.Za Kitchen pizzas are not covered in a blanket of cheese. We follow the Italian philosophy of balance, with flavors and textures. Cheese is applied in the same method as pepperoni or mushrooms, to complement the other toppings and not weigh down the delicate Roman crust.

After gently preparing our pizzas we bake them at 500 degrees until the exterior crust is crisp, the toppings are cooked through and cheese is melted. Attentive Chefs rotate the pans halfway through cooking to ensure an even bake. The P.Za Kitchen Roman pizzas are carefully removed from their pans onto a board, then cut with Roman pizza Scizzas made to quickly cut through the delicate crust. Regular chefs knives or traditional pizza cutters cannot be used to cut Roman pizzas, or the airy crust will compress where cut, creating a dense and chewy crust.
